Lamington is a favorite Australian dessert consisting of squares of sponge cake coated in a layer of chocolate, then in shredded coconut.

Ingredients

  • FOR THE SPONGE CAKE
  • 3 eggs
  • 1/2 cup unsalted butter (soft)
  • 1/2 cup sugar
  • 1 teaspoon pure vanilla essence
  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1/2 cup milk
  • FOR THE COATING:
  • 4 cups icing sugar (powdered)
  • 6 tablespoons unsweetened cocoa powder
  • 1 tablespoon unsalted butter
  • 1/2 cup milk
  • 3 cups desiccated coconut

How To Make classic lamingtons

  • Step 1
    Sponge Cake: Preheat oven to 350 F.
  • Step 2
    In a bowl, beat the eggs while gradually adding the sugar until it is dissolved. Add the milk and vanilla essence. Stir in the flour and baking soda. Add the butter into the mixture and continue beating.
  • Step 3
    Pour the mixture into a lightly greased square baking dish and bake for 40 minutes. Or until tester comes out clean. Allow the cake to cool for at least 20 minutes, then place in the freezer for at least 40 minutes.
  • Step 4
    Chocolate Coating: In a saucepan, mix the cocoa powder and icing sugar. Gradually add the butter and milk. Warm the chocolate mixture over a very low heat until reaching a smooth texture.
  • Step 5
    Cut the sponge cake into 2-inch squares.
  • Step 6
    Pick each square with a fork, and using a spoon, generously cover each of them with the chocolate mixture making sure that it is evenly applied. Let the excess chocolate drip over the bowl.
  • Step 7
    Dip each square into the desiccated shredded coconut. Allow the lamington squares to rest on a cooling rack for at least 30 minutes.
