We all know that sausage is never going to be considered healthy. That said we all need a treat occasionally and sausage isn't going to change. What can be changed is the biscuits so they have been lightened up and made them as healthy as a biscuit is ever likely to get. While any milk will work in the gravy I have to admit that I do recommend whole dairy in this case.

Ingredients For healthy-er biscuits & sausage gravy

  • BISCUITS:
  • 6
    egg whites
  • 3/4 c
    almond flour
  • 1/4 c
    coconut flour
  • 1 tsp
    baking powder
  • 1/4 tsp
    sea salt
  • 1/4 c
    milk, dairy or other
  • 2 Tbsp
    butter, cut up into bits
  • SAUSAGE GRAVY:
  • 1 lb
    well seasoned pork ground sausage
  • 1 tsp
    almond flour
  • 3 Tbsp
    arrowroot powder
  • 2-3 c
    milk, dairy or other
  • sea salt and fresh ground pepper to taste

How To Make healthy-er biscuits & sausage gravy

    Heat oven to 400 degrees. Line a baking sheet with parchment.

    Mix together almond flour, coconut flour, baking powder, and salt together in a mixing bowl. Cut in butter. Stir in milk. Set aside.

    In another bowl, beat the 6 egg whites until very white and foamy. Fold the egg whites into flour mixture until well combined.

    Drop batter by spoonfuls onto baking sheet. Bake biscuits 15-18 minutes or until tops start to brown.

    Saute sausage until cooked throughout. Remove from pan, but leave the fat in the pan. Add a little extra fat of your choice if you need it (there needs to be about 1/4 cup in the pan).

    To the fat, add your almond flour & arrowroot powder, whisking over medium heat until your get a good paste.

    Add milk and bring to a slow boil, whisking constantly. Add sausage back into the mixture and continue stirring until it is the desired thickness. Serve the gravy over the biscuits.
