summer squash w/ bacon

I learned how to make this squash from Mom Burgess. Everyone in our family has always enjoyed this dish.

Ingredients

  • 3 - yellow summer squash, sliced thin
  • 2 - slices of bacon
  • 1/4 - onion, sliced
  • - salt and pepper

How To Make summer squash w/ bacon

  • Step 1
    Cut up bacon into small pieces. Fry the bacon in a medium size frying pan until crisp. Take out the bacon to drain, leaving the fat in the pan
  • Step 2
    Add the sliced onions and summer squash to the pan. Add salt and pepper to taste. Fry/steam( if you have a lid you can put it on for a few minutes) in the pan, on medium heat, turning the squash occasionally with a turner, cook until the squash is tender and some lightly brown. Place in a serving bowl and top with crisp bacon, serve.
