Ingredients For apple-and-ham salad

3crisp apples, whichever you like best

juice of 1 lemon

3 Tbspextra-virgin olive oil

5shallots, thinly sliced

kosher or sea salt

2 Tbspapple cider vinegar

2 Tbspdijon mustard
-
1/4 cfat free yogurt

1/4 cwater
-
1/2 lbfat trimmed ham, torn or cut into pieces

2 bunchbunches watercress, trimmed

4endives, sliced crosswise

freshly ground pepper (use your favorite, i like white pepper here)
How To Make apple-and-ham salad

1Thinly slice the apples. Toss with the lemon juice in a large bowl.

2Make the Dressing: Heat the olive oil in a skillet over medium heat. Add the shallots and 1/2 teaspoon salt and cook, stirring occasionally, until golden, about 8 minutes. Whisk in the vinegar and mustard; remove from the heat and let cool slightly. Whisk in the yogurt and 1/4 cup water.

3Add the dressing to the bowl with the apples. Add the ham, watercress and endives. Season with salt and pepper and toss to coat.
