old fashioned peanut brittle
This was my Grandma Lillie's recipe, so it is very old. I think my Mom changed it to the salted roasted peanuts instead of raw peanuts like my Grandma used. I much prefer the the roasted peanuts instead of raw.

Ingredients
- 2 cups sugar
- 1 cup light corn syrup
- 1 cup water
- 2 cups salted, roasted peanuts
- 1 teaspoon butter
- 1 teaspoon baking soda
How To Make old fashioned peanut brittle

Step 1Butter a heavy cookie sheet(this is for the finished product), or you could you pan spray.

Step 2Combine the sugar, syrup and water in a 3 qt pan. Cook slowly until sugar dissolves to 238 on candy thermometer, then cook to 330 until mixture is pale yellow, turn off heat and cool to 290. Remove from heat and add the butter, soda and peanuts.

Step 3Pour onto the prepared greased cookie sheet, spread with a wooden spoon. Be careful this is very hot! When cool, break brittle apart and store in an air tight container.
