honey & dried fig scones

Don't you just love scones! I don't know if I've ever met one that I didn't like and some that I absolutely love. This one has a good standing as I know for a fact that I've never met a fig that I didn't love.

Ingredients

  • 2/3 cup oldfashioned oatmeal
  • 1 1/2 cups all-purpose flour
  • 10 dried figs
  • 1 teaspoon baking powder
  • 1 tablespoon vanilla sugar
  • 4 1/2 tablespoons butter
  • 3/4 cup low-fat yogurt
  • 1/4 cup honey

How To Make honey & dried fig scones

  • Step 1
    Preheat oven to 220°C/ 430°F. Cut figs into smaller cubes.
  • Step 2
    Mix all dry ingredients in a bowl.
  • Step 3
    Cube the cold butter and mix it into the flour-mix using your hands. Make sure there are no lumps bigger than a pea.
  • Step 4
    Stir together yogurt and honey and add it to the bowl.
  • Step 5
    Divide the dough in two and make a flat round of each one. Cut into 6 scones each.
  • Step 6
    Transfer to a baking sheet with non-stick paper and place the scones in the oven. Immediately turn down the heat to 175°C/ 350°F and bake for approx. 25 minutes.
  • Step 7
    Serve warm and enjoy.
