rhubarb cake
This is a very old recipe and one I remember eating as a child. We always had rhubarb growing at Grandpa and Grandma Louck's home in South Dakota.

Ingredients
- 1/2 cup butter
- 1 cup sour cream
- 1 large egg
- 1/2 cup sugar
- 1 teaspoon soda
- 1 1/2 cups flour
- pinch salt
- 1/4 teaspoon cinnamon
- 3 cups rhubarb, cut in small pieces
- TOPPING
- 1/4 cup flour
- 3 tablespoons butter, softened
- 1/4 cup brown sugar
- 1/4 cup walnuts, chopped
How To Make rhubarb cake

Step 1Mix together the butter and egg, add sour cream. Add sugar, flour, soda, salt,and cinnamon, mix. Add the rhubarb and stir together.

Step 2Pour mixture into a prepared 9" x 9" pan. Mix the brown sugar and flour together then cut the butter into the flour mixture. Add the nuts. Sprinkle on top of batter then bake at 350 for about 30 minutes. Serve with whip cream or ice cream.
