maltese vegetable & goat cheese ftira

Full of Mediterranean flavours this flatbread is easily customized. Feel free to swap out any herbs or toppings you think you would like. I wanted to use eggplant but hand none on hand.

yield Makes one 8" x 10" Flatbread. Prep time does not include rising time or overnight in the fridge.

Ingredients

  • 2 cups bread flour
  • 1/2 tablespoon yeast
  • 1 teaspoon salt
  • 3/4 teaspoon sugar
  • 1 1/4 cups plus 1 tbsp warm water
  • extra olive oil for brushing on crust
  • TOPPINGS
  • 1 small zucchini - sliced in thin coins
  • 6 grape tomatoes halved (can use slices of regular tomatoes
  • 3 black olives, pitted and sliced
  • 2 slices slices of red onion separated into rings
  • 2 mushrooms, thinly sliced
  • 1/4 bell pepper- any colour or mix, sliced thinly
  • 2 ounces goat cheese - in pieces
  • 2 tablespoons fresh basil or mixture of herbs of your choice.
  • salt and pepper to taste

How To Make maltese vegetable & goat cheese ftira

  • Step 1
    Dough: Mix the dry ingredients in a bowl. Mix the 3 T of oil with the warm water and slowly add to the dry ingredients slowly, mixing as you go. This should give you a soft dough.
  • Step 2
    Knead the dough on a floured surface for about 10 minutes until smooth. Place back in the bowl, cover with a clean towel and let rise in a warm place for at least 3 hours and then cover the bowl with cling wrap and put it in the fridge overnight..
  • Step 3
    Preheat the oven too 400 F Roll out the dough until it is a little larger than the tray or shallow pan you are using. Prepare the tray by brushing with a little olive oil and then dust it with some semolina.
  • Step 4
    Place the dough in the prepared pan and brush the surface with some olive oil.
  • Step 5
    Next add all of your toppings and season with salt and pepper - a little dried oregano is nice too.
  • Step 6
    Place your Ftira in the preheat oven for 30 minutes until the dough looks golden brown. Remove from the oven, sprinkle with fresh herbs of your choice. I used Basil but Rosemary and fresh Oregano would be good too. and Serve immediately. (Note: This is a work in progress - I am not as yet entirely satisfied I am not entirely satisfied with the results as yet)
