How To Make maltese vegetable & goat cheese ftira
-
Step 1Dough: Mix the dry ingredients in a bowl. Mix the 3 T of oil with the warm water and slowly add to the dry ingredients slowly, mixing as you go. This should give you a soft dough.
-
Step 2Knead the dough on a floured surface for about 10 minutes until smooth. Place back in the bowl, cover with a clean towel and let rise in a warm place for at least 3 hours and then cover the bowl with cling wrap and put it in the fridge overnight..
-
Step 3Preheat the oven too 400 F Roll out the dough until it is a little larger than the tray or shallow pan you are using. Prepare the tray by brushing with a little olive oil and then dust it with some semolina.
-
Step 4Place the dough in the prepared pan and brush the surface with some olive oil.
-
Step 5Next add all of your toppings and season with salt and pepper - a little dried oregano is nice too.
-
Step 6Place your Ftira in the preheat oven for 30 minutes until the dough looks golden brown. Remove from the oven, sprinkle with fresh herbs of your choice. I used Basil but Rosemary and fresh Oregano would be good too. and Serve immediately. (Note: This is a work in progress - I am not as yet entirely satisfied I am not entirely satisfied with the results as yet)
