chewy oatmeal cookies
This was originally my Grandma Lillie's recipe, but I have adjusted it to my taste. The original recipe had more oatmeal and was not as chewy and soft. I have also added the mixed dried fruit instead of just raisins, but of course, you can use just raisins.

This recipe makes about 3 dozen cookies
Ingredients
- 3/4 cup butter, room temperature
- 1 1/3 cups brown sugar, lightly packed
- 2 large eggs
- 1 teaspoon vanilla
- 1/4 teaspoon nutmeg, ground
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 3/4 teaspoon baking soda
- 1 1/3 cups flour
- 1 1/3 cups oatmeal, quick
- 2/3 cup dried fruit
How To Make chewy oatmeal cookies

Step 1In a mixing bowl, cream the butter and sugar together until light and fluffy.

Step 2Add the rest of the ingredients, in order on medium speed, mixing after the eggs, then add the soda, flour and oatmeal. Stir in dried fruit. I have used a combination of raisins, dates, & cranberries. (I have not found this in the store, but have just bought the separate fruits, diced them, and mixed it myself) Bake on a parchment paper lined cookie sheet at 375 for about 10 minutes.

Step 3For sugar free and whole wheat: 2/3 cup whole wheat flour, 1/3 cup white flour and sugar substitute for brown sugar.
