pecan raisin scones

I have had this recipe for years. I have been looking for it and came across it suddenly, of course that's the case! Very, very tasty! You can adapt it, take out pecans, add other fruit, etc.

Ingredients

  • 2 cups flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 grated peel of a lemon
  • 1/2 cup butter, unsalted
  • 1 cup pecan pieces
  • 1/2 cup raisins, golden
  • 3/4 cup buttermilk

How To Make pecan raisin scones

  • Step 1
    Mix the flour, sugar, baking powder, baking soda, salt and lemon peel together in a mixing bowl.
  • Step 2
    Cut butter into small chunks, add to bowl and using a whisk on your mixer, mix together until butter is in small pieces. Add raisins and walnuts. Save out 2 Tbls. of buttermilk and then add the buttermilk. Mix until all dry ingredients are wet. Do not over mix.
  • Step 3
    Take out dough and pat into a square about 3/4" thick. Cut into 4ths, then cut each square in half so you have a triangle of dough. Place on prepared pan about 1" apart. Brush tops of scones with more buttermilk. Bake at 425 for 10 minutes.
