I have had this recipe since Kenny was born and is always a favorite in the summer.

Ingredients

  • 1 bag salad mix
  • 2 - celery stalks, washed and diced
  • 1/2 - pepper, green, diced
  • 1/2 - onion, purple, diced
  • 1 package peas, green, frozen
  • 1 1/2 cups miracle whip
  • 3/4 cup sour cream
  • 3 tablespoons sugar or 2 pkg of truvia
  • 5 - eggs, hard boiled
  • 8 ounces sharp cheddar cheese, shredded
  • 2 ounces bacon bits, real,

How To Make fresh layered salad

  • Step 1
    Boil eggs, cover eggs with water in a small pan, bring to boil, boil 10 minutes, drain hot water, add cool water to pan to cool eggs, peel eggs and dice
  • Step 2
    In a glass 9"x 13" pan, place chopped salad mix. Add celery, green pepper, onion, and green peas, sprinkling evenly over each layer.
  • Step 3
    Mix the Miracle Whip, sour cream and sugar together in a small bowl. Carefully spread over peas.
  • Step 4
    Layer the diced eggs, cheese, and bacon bits, refrigerate until ready to serve. I usually make this in the morning for the evening meal or make the day ahead. This lasts for a couple of days, refrigerated
