"Il-kawlata" is a traditional Maltese dish which is slowly being forgotten. Il-kawlata is a complete dish with a large and varied quantity of vegetables, beans, pork and pasta. The pasta used in the original kawlata recipe is macaroni, however you may use a similar size variety. You may use canned beans to save time or you may soak dry beans overnight and boil them for approximately one hour and a half or until they soften, then drain. You may freeze portions for use later.

Ingredients

  • 1 cup broad beans
  • 1 1/2 pounds smoked pork shank or hock
  • 2 cups pumpkin, chopped
  • 3 stalks celery with leaves, chopped
  • 3 large carrots, peeled and chopped into small cubes
  • 1 medium onion chopped
  • 2 cups cauliflower, cut into florets
  • 1 cup cabbage, chopped
  • 4-6 cups vegetable or chicken stock, or as desired
  • 2 tablespoons tomato paste
  • 1 teaspoon fennel seeds
  • salt and pepper to taste
  • 3 1/2 ounces small pasta
  • 3 1/2 ounces Romano cheese, grated

How To Make ara din ir-rietta bil-malti (bean soup)

  • Step 1
    Place all the ingredients except the cheese and pasta in a large pot and mix everything together.
  • Step 2
    Place the covered pot on a high flame. When it comes to the boil, lower the heat and allow to simmer, still covered, for 45-50 minutes, stirring occasionally.
  • Step 3
    Remove the meat from the pot, cut away from the bones, cut meat into bite-sized pieces and put back into the pot.
  • Step 4
    Add salt and pepper.
  • Step 5
    Add the pasta and mix. Increase to moderate heat and cook the pasta until tender.
  • Step 6
    Remove the pot from heat, add half the cheese and stir.
  • Step 7
    Serve with more cheese on top
