maltese kafè my way

On this hot day I decided to make coffee using Maltese ingredients. I much enjoyed it this afternoon and then decided to post the recipe. P.S. the 3 tsp sugar is what I used in a tall glass for the iced drink. Use as much or little as you like in both versions.

Ingredients

  • 2 tablespoons strong ground african coffee or your favorite
  • 4 cups water
  • 1 whole anise (2 if small) lightly crushed
  • 2 cinnamon sticks
  • 3/4 teaspoon (scant) nutmeg
  • FOR A SINGLE CUP AFTER BREWING COFFEE
  • 3 teaspoons vanilla sugar
  • 3/4 teaspoon rose water

How To Make maltese kafè my way

  • Step 1
    place first 5 ingredients into a pot with a lid.
  • Step 2
    Bring to a boil then turn down to a mild simmer and put on the lid (if it a good fit leave a crack for steam to escape). Allow to simmer for 15 mins.
  • Step 3
    Place a paper coffee filter in a sieve and strain the coffee into a container. Use the filter as you want to remove the nutmeg.
  • Step 4
    At this point decide if you want it hot or iced. If hot go ahead and pour a cup adding the two remaining ingredients. You can also triple the last 2 ingredients and flavor the entire all of it at once.
  • Step 5
    For Iced (my choice): place the brewed coffee into the freezer or until it's nicely cooled. Add ice to a glass .Pour in the coffee adding the 2 remaining ingredients to your personal liking.
