easy peasy almost creamy banana bread

This is my adaption of a couple of bread recipes. I've made it super simple and it tastes marvelous. By mixing everything in the stand mixer it goes quicker and I just don't see the need to premix things that are all going into the big mixed to be mixed anyway. This loaf, with no delicate care, rises very well in baking and has a very smooth texture (except for the nuts of course). By the way ,the nuts are optional, if you don't want them don't use them. You can use raisins, candy chips or nothing at all for add in's. Also, you can use all Splenda or use all sugar.

Ingredients

  • 1/2 cup butter or margarine
  • 1/2 cup sugar
  • 1/2 cup splenda
  • 2 large eggs, room temp
  • 1 cup a.p. flour
  • 1/2 cup white whole wheat flour
  • 1 teaspoon baking soda
  • 3 - bananas, very ripe
  • 1/2 cup fat free greek yogurt
  • 1 teaspoon pure vanilla extract, or more- i just poured in what was left in the bottom of the bottle (closer to 1 1/2- 2 tsp)
  • 1 cup chopped nuts- which ever you like

How To Make easy peasy almost creamy banana bread

  • Step 1
    Preheat oven to 350 degrees. Grease and flour one 9x5-inch loaf pan (or 3 small ones). Pan should be 3/4 full of batter.
  • Step 2
    In the mixer bowl cream the butter with sugar until light and fluffy. Add the eggs to the bowl one at a time and mix well. Break up the bananas and add them to the mix one at a time.
  • Step 3
    Add the flour, baking soda, and salt to the mixer at 1/2 cup at time combine with the butter mixture.
  • Step 4
    Add in the yogurt, vanilla and nuts, combine well.
  • Step 5
    Pour into prepared pans and bake for 50 minutes. Cool for 10 minutes and then turn the loaf out onto a rack.
