30 Minute Lentil Bolognese

"A quick and easy bolognese sauce with lentils and mushrooms as the "meat"!..."

INGREDIENTS
2 tablespoons olive oil
1 cup onion, diced
1 cup carrots, diced
1 cup celery, diced
8 ounces mushrooms, sliced or chopped
3 cloves garlic, chopped
1/2 teaspoon red pepper flakes, or to taste (optional)
1 (15 ounce) can diced tomatoes (or 2 cups marinara sauce (link))
2 (15 ounce) cans lentils, drained and rinsed
2 teaspoons Italian seasoning (link) (or oregano)
1 tablespoon balsamic vinegar
1/4 cup parmigiano reggiano (parmesan), grated (optional)
salt and pepper to taste
