oatmeal cookies with peanut butter filling
These freeze well with or without filling. My mom got this recipe from Mrs. Oliver, our neighbor across the street. Mom would make a batch of these to take camping with us every weekend.

Ingredients
- COOKIES
- 1 cup brown sugar, firmly packed
- 1 cup butter
- 2 cups flour (scant cups)
- 1 teaspoon salt (scant teaspoon)
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- - boiling water
- 3 cups oatmeal, uncooked
- PEANUT BUTTER FILLING
- 1/2 cup peanut butter, creamy
- 1/4 cup butter, softened
- 2 1/2 cups confectioners' sugar, sifted
- 1/2 teaspoon vanilla
- 3-4 tablespoons cream or milk
How To Make oatmeal cookies with peanut butter filling

Step 1Cream butter and sugar together. Sift next 4 ingredients and add to creamed mixture. Mix and add oatmeal. Chill overnight before rolling thin.

Step 2Bake at 350 for about 10 minuets or just start to brown around edges. Use a juice glass as a cutter to get about 90 cookies. Put 2 cookies together with the filling to make a sandwich cookie

Step 3Peanut butter Filling: Cream butters together. Blend in remaining ingredients and beat until smooth.
