oatmeal cookies with peanut butter filling

These freeze well with or without filling. My mom got this recipe from Mrs. Oliver, our neighbor across the street. Mom would make a batch of these to take camping with us every weekend.

Ingredients

  • COOKIES
  • 1 cup brown sugar, firmly packed
  • 1 cup butter
  • 2 cups flour (scant cups)
  • 1 teaspoon salt (scant teaspoon)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • - boiling water
  • 3 cups oatmeal, uncooked
  • PEANUT BUTTER FILLING
  • 1/2 cup peanut butter, creamy
  • 1/4 cup butter, softened
  • 2 1/2 cups confectioners' sugar, sifted
  • 1/2 teaspoon vanilla
  • 3-4 tablespoons cream or milk

How To Make oatmeal cookies with peanut butter filling

  • Step 1
    Cream butter and sugar together. Sift next 4 ingredients and add to creamed mixture. Mix and add oatmeal. Chill overnight before rolling thin.
  • Step 2
    Bake at 350 for about 10 minuets or just start to brown around edges. Use a juice glass as a cutter to get about 90 cookies. Put 2 cookies together with the filling to make a sandwich cookie
  • Step 3
    Peanut butter Filling: Cream butters together. Blend in remaining ingredients and beat until smooth.
