Dad requested that I get this recipe after he ate it at a pot luck dinner. It is one of his favorites.

Ingredients

  • DRESSING
  • 3/4 cup apple cider vinegar
  • 1 cup sugar
  • 1/2 cup canola oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • VEGETABLES
  • 1 can french-style green beans
  • 1 can green peas
  • 1 can white shoepeg corn
  • 1 bunch green onions, cleaned and sliced thinly
  • 1 cup celery, diced
  • 1 medium green pepper, diced
  • 1-2 ounce jar pimentos, diced

How To Make marinated vegetable salad

  • Step 1
    Combine all the ingredients for the dressing in a small pan, bring to a boil, cool while prepping the vegetables.
  • Step 2
    Drain all the vegetables that are canned, including the pimentos. In a nice bowl, add all the vegetables. Pour the dressing over the vegetables and stir. Cover and refrigerate overnight. Stir before serving.
