This is great-grandma Burgess' recipe as was told to me. Nothing was written down. I watched and learned and came up with this revised recipe because she used homemade biscuits and also used a lot of oil to fry the pies in and of course, a little bacon grease.

Ingredients

  • 6 apples, tart
  • 1 piece of bacon
  • 1/4 cup sugar
  • 1 tablespoon flour
  • 1 pinch nutmeg, ground
  • 1 pinch cinnamon
  • 2 tablespoons water
  • 1 can biscuits(8)

How To Make apple jacks

  • Step 1
    Core, peel, and slice apples. Cut up bacon in small pieces and fry in cast iron pan until crisp. Take bacon out of pan, add apples. Put a lid on the pan and let steam for about 5 minutes on low heat. Stir and let steam for another 5 minutes or until tender.
  • Step 2
    Mix the flour, sugar and spices together in a small bowl. Add to the apples, stir, add the water, stir and cook for 2-5 minutes. Taste, you may need more sugar depending on how tart your apples are. Add the bacon to the apples, stir. Let cool for about 15 minutes.
  • Step 3
    While apples are cooling, open the biscuits and separate them. Roll out each biscuit with a rolling pin to about 5" in diameter. You do not need flour on the surface where you roll. Just roll them on the counter top or table.
  • Step 4
    Add about 1 large Tablespoon of apple mixture to the center of the rolled out biscuit, fold over, roll the edge and crimp with a fork. (This will take practice)
  • Step 5
    Fry each side in about 1/4" of oil in a frying pan until lightly browned. Take out of pan and place on a cookie sheet and bake at 350 for about 10 minutes(this will finish cooking the dough)
