I found this recipe in a cookbook long years ago. I have always served this with Bratz.

Ingredients For german potato salad

  • 8 md
    potatoes
  • 5 slice
    bacon
  • 1 1/2 c
    onion, diced
  • 3/4 c
    brown sugar, lightly packed
  • 1/2 c
    apple cider vinegar
  • 1/4 c
    flour
  • 1 c
    water
  • 1/2 tsp
    salt

How To Make german potato salad

    Peel potatoes, slice fairly thick (about 1/4"), sprinkle a little salt on them-cook until tender, drain and hold.

    Cut up bacon into small pieces(I usually use a kitchen shears). Fry bacon and onion together until bacon is brown and crisp. Add sugar to bacon and stir over low heat until dissolved, add vinegar, stir. Make a slurry with the flour and water. Add to pan, cook and stir for about 5 minutes, add salt.

    In a bowl, add the potatoes and bacon mixture, lightly toss. Serve warm.
