10-Shallot Braised Chicken Thighs

INGREDIENTS
12 ounces shallots (6 to 10)
4 cloves garlic
2 large sprigs fresh rosemary leaves
2 large sprigs fresh thyme leaves
3 to 4 large sprigs fresh parsley
1 large lemon
6 bone-in, skin-on chicken thighs (2 to 2 1/2 pounds total)
2 teaspons kosher salt, divided
1 teaspoon freshly ground black pepper, divided
1 tablespoon grapeseed oil, or any oil with a high smoke point
6 slices bacon (about 6 ounces)
1 tablespoon unsalted butter
1 cup low-sodium chicken broth
1 tablespoon cornstarch
1 cup dry white wine
Serving options: mashed potatoes, cooked pasta, or cooked grains
