Emperor Franz Joseph proved very loyal to his native country and region. Alongside cooked beef, he loved simple pastry dishes made from eggs, flour, milk and a little sugar, such as the light and creamy Kaiserschmarren.

Ingredients

  • 6 egg yolks
  • 1 pinch salt
  • 8 ounces (fluid oz) milk or fresh cream
  • 5 ounces flour
  • 6 egg whites
  • 2 ounces sugar
  • 2 ounces butter
  • 2 ounces raisins, yellow

How To Make kaiserschmarrn, emperors omelette

  • Step 1
    Mix milk, salt, yolks and flour into a batter.
  • Step 2
    Beat egg whites until stiff, beat in sugar spoon by spoon.
  • Step 3
    Fold egg whites into batter.
  • Step 4
    Heat butter in a pan, pour in batter, sprinkle with raisins.
  • Step 5
    Cover the pan with lid and cook app. 3 minutes. over a medium flame until brown underneath. Turn the omelette and cook the second side until brown.
  • Step 6
    Tear the omelette with two forks into little pieces. Serve immediately dusted with sugar.
