Emperor Franz Joseph proved very loyal to his native country and region. Alongside cooked beef, he loved simple pastry dishes made from eggs, flour, milk and a little sugar, such as the light and creamy Kaiserschmarren.

Ingredients
- 6 egg yolks
- 1 pinch salt
- 8 ounces (fluid oz) milk or fresh cream
- 5 ounces flour
- 6 egg whites
- 2 ounces sugar
- 2 ounces butter
- 2 ounces raisins, yellow

Step 1Mix milk, salt, yolks and flour into a batter.

Step 2Beat egg whites until stiff, beat in sugar spoon by spoon.

Step 3Fold egg whites into batter.

Step 4Heat butter in a pan, pour in batter, sprinkle with raisins.

Step 5Cover the pan with lid and cook app. 3 minutes. over a medium flame until brown underneath. Turn the omelette and cook the second side until brown.

Step 6Tear the omelette with two forks into little pieces. Serve immediately dusted with sugar.
