moules frites (mussels and french fries)

This is great dish for entertaining because you can do pretty much everything in advance, up to where you add the wine to the pot. A few minutes before serving, simply reheat the herbed wine and add the mussels. Serve with your choice of store-bought or homemade crispy, hot French fries and a loaf of crusty bread for sopping up all that goodness. Enjoy!

Ingredients
- 4 tablespoons unsalted or salted butter
- 1/2 cup peeled and finely chopped shallots
- 6 cloves garlic, peeled and finely chopped
- 1 pinch salt
- 3 cups dry white wine (good drinking wine)
- 1/4 cup chopped flat-leaf parsley
- 4 pounds mussels, cleaned and debearded
- cooked, hot french fries, for serving
- crusty bread, for serving

Step 1In a large pot or Dutch oven, melt the butter over medium heat. Add the shallots, garlic, and salt, and cook, stirring frequently, until the shallots and garlic are soft and wilted, 1 to 2 minutes.

Step 2Add the wine and parsley and bring to a boil. Add the mussels to the pot, stirring them a few times, then cover and steam for about 5 minutes until the mussels open, lifting the lid midway during cooking to give them a stir.

Step 3Remove from heat and serve the mussels with French fries and hearty, coarse bread, to soak up the liquid.
