Warm Avocado Soup
1/2inch fresh ginger, minced
1 pinchof dried chili
2limes, juice of
10fresh mint leaves
·salt & pepper
MINT OLIVE OIL:
15 - 20fresh mint leaves
3 Tbspolive oil
How to Make Warm Avocado Soup
- Add olive oil to a pan on medium heat.
Sauté onion, garlic, ginger and chili until soft.
- Place in a blender together with the rest of the ingredients.
Pulse it and taste, add more salt and water if needed.
Pour it into a pot and heat it before serving.
- Mint Olive Oil:
Pound 15-20 mint leaves in a mortar, add 3 tbsp olive oil and mix.
Let it sit for a while before dripping it over the soup.
You may add some more olive oil if you want it thinner.
