easy tucson cheese crisps

Every time we go to Tuscon, AZ to visit my sister, we go straight to a restaurant called Blancos to get their margaritas and the delicious cheese crisps. It is the best treat! What's not to love about warm melted cheese (and optional roasted chiles) on a crispy flour tortilla? It's an original creation invented in Tucson, Arizona. Enjoy!

Ingredients

  • 4 medium flour tortillas (find the thinnest ones you can - even thin enough to see through!)
  • 4 teaspoons unsalted butter, melted
  • 2 cups grated cheese ((use any combination of good melting cheese you like: i used longhorn style cheddar and oaxaca melting cheese. monterey jack and cheddar is a good, melty combo as well - best freshly grated)
  • optional addition: chiles

How To Make easy tucson cheese crisps

  • Step 1
    Preheat oven to 325 degrees F.
  • Step 2
    Brush tortillas with a little butter on each side. Place tortillas on a wire rack on a baking sheet. Bake for 20 to 25 minutes, turning halfway through.
  • Step 3
    Remove from oven and spread tortillas with cheese (and chiles, if desired).
  • Step 4
    Turn oven heat to 500 degrees.
  • Step 5
    Return tortillas to oven for about 5 minutes, until cheese(s) bubble.
  • Step 6
    You can use a pizza cutter to cut into wedges or cut it any way you'd like. The only requirement is to enjoy this crispy, cheesy treat!
