easy tucson cheese crisps

Every time we go to Tuscon, AZ to visit my sister, we go straight to a restaurant called Blancos to get their margaritas and the delicious cheese crisps. It is the best treat! What's not to love about warm melted cheese (and optional roasted chiles) on a crispy flour tortilla? It's an original creation invented in Tucson, Arizona. Enjoy!

Ingredients
- 4 medium flour tortillas (find the thinnest ones you can - even thin enough to see through!)
- 4 teaspoons unsalted butter, melted
- 2 cups grated cheese ((use any combination of good melting cheese you like: i used longhorn style cheddar and oaxaca melting cheese. monterey jack and cheddar is a good, melty combo as well - best freshly grated)
- optional addition: chiles
How To Make easy tucson cheese crisps

Step 1Preheat oven to 325 degrees F.

Step 2Brush tortillas with a little butter on each side. Place tortillas on a wire rack on a baking sheet. Bake for 20 to 25 minutes, turning halfway through.

Step 3Remove from oven and spread tortillas with cheese (and chiles, if desired).

Step 4Turn oven heat to 500 degrees.

Step 5Return tortillas to oven for about 5 minutes, until cheese(s) bubble.

Step 6You can use a pizza cutter to cut into wedges or cut it any way you'd like. The only requirement is to enjoy this crispy, cheesy treat!
