This recipes takes 2% Velvetta and low-fat parmesan well. I like to use these to try to cut back on the fat a little.
I also like to go a little heavy on the pizza sauce.
You can use 1 lb. ground sausage or 1 lb. ground turkey for this as well.

Ingredients

1 1/2 cpenne pasta, uncooked

1 lbground beef
-
4 smallzucchini, cubed

1red pepper, chopped

1 can(s)pizza sauce
-
1/2 lbVelvetta, cubed

How to Make Zucchini Penne Bake
- While cooking pasta brown meat in lg. deep skillet on mid-heat heat. Drain and return to skillet.
- Stir in zucchini, peppers and sauce; cook 5 to 6 minutes or until veggies are tender, stirring occasionally. Remove from heat.
- Drain pasta. Add to meat mixture with Velvetta; stir until well blended. Spoon into 9x13 dish sprayed with nonstick. Sprinkle with parmesan. Bake 15 minutes.
