I have grown up making this dish and don't really use a recipe. This is the best I could come up with but you are invited to adjust seasonings to your taste.

Stove Top


  • 1 lb
    meat - gound beef, turkey or pork or stew meat
  • 3-4 medium
    potatoes, peeled and cubed
  • 1/2 medium
    onion, quartered and sliced
  • 1 clove
    garlic, finely minced
  • 1/2 c
    cilantro, chopped
  • 1 c
    fresh/frozen green chili, roasted, peeled and chopped
  • 1/2 c
  • 5-6 c
  • 1
    bouillon cube
  • 1-1/2 tsp
    creole or cajun seasoning
  • 1-1/2 tsp
    garlic salt

How to Make Green Chili Stew


  1. Brown meat over med high heat until well caramelized.
  2. Add garlic and onion. Cook until onion is translucent.
  3. Add flour and seasonings and cook well.
  4. Add potatoes, green chili, cilantro, water and bouillon.
  5. Reduce heat to low and simmer until potatoes are tender.
