Ingredients

  • 7 LB
    watermelon rind
  • 1 TBSP
    slaked lime
  • 1 GAL
    water
  • 4 LB
    sugar
  • 1 PT
    vinegar
  • 2
    cinnamon sticks, bag of cinnamon candy red hots

How to Make "WATERMELON RIND PICKLES"

Step-by-Step

  1. PEEL AND CUT THE RIND INTO 1 1/2 INCH PIECES,THEN SOAK OVERNIGHT IN MIXTURE OF LIME AND WATER.
  2. WASH SEVERAL TIMES,THEN PLACE IN A LARGE COOKING POT.COVER WITH WATER AND COOK UNTIL TENDER,THEN DRAIN.MIX THE SUGAR,VINEGAR AND CINNAMON STICKS,RED HOTS.BRING TO A BOIL.COOL.POUR OVER THE RIND AND LET STAND OVERNIGHT.
  3. BRING TO A BOIL AND BOIL UNTIL THE RIND IS TRANSPARENT.PACK THE RIND INTO HOT STERILIZED JARS,THEN FILL WITH HOT SYRUP.
  4. SEAL THE JARS.
