This is a great summer salad. I love the combination of gorgonzola cheese and peaches and put it on everything in the summer! The wasabi peas bring a nice zing; this was completely discovered by accident when I tipped a bowl of them into the salad. I decided to serve it that way and, SUCCESS!

Ingredients

  • 1 lb
    chicken breasts, boneless and skinless
  • 1
    head of boston lettuce
  • 2
    peaches (diced)
  • 1/2 c
    wasabi peas
  • 1 c
    gorgonzola cheese
  • 1 c
    red wine vinaigrette dressing

How to Make Sweet and Spicy Summer Salad

Step-by-Step

  1. Heat one tablespoon of olive oil in a skillet over medium heat.
  2. Apply salt and pepper to the chicken breasts; chop them into small strips and put into hot skillet. Coook about 10-15 minutes (golden brown in color).
  3. Dice boston lettuce into bite-sized pieces. Add peaches and wasabi peas and toss.
  4. Crumble gorgonzola cheese and mix throughout the salad.
  5. Add chicken breast strips, still warm. Top with red wine vinagrette dressing.
