I had this delicious moist bread at my aunt's when I visited in August. A perfect bread for fall, as well as the holidays!

How to Make Cream Cheese Swirl Carrot Bread

Step-by-Step

  1. 350 degree oven. Grease loaf pan. In bowl, combine all filling ingredients;(see below) beat at medium speed until smooth. Set aside. In bowl, combine carrot quick bread. Mix water, orange juice, oil and egg. Stir 50 - 75 strokes by hand until mix is moistened. Pour half of the batter into pan. Spoon cream cheese filling over batter. Spoon remaining batter on top of filling. Sprinkle with sliced almonds. Bake for 55 - 65 minutes until toothpick inserted 1" deep in center comes out clean.
  2. Filling: 2 - 3 oz. pkg. cream cheese, softened
    1/4 c. sugar, 1 egg, 1 tsp. grated orange peel.

    After taking loaf out of pan, cool on cooling rack 15 minutes; remove from pan. Cool completely; store in refrigerator. Just before serving, heat orange marmalade in small saucepan; brush over load. Use your discretion on the amount of marmalade.
