My kids love these muffins.

Blue Ribbon Recipe

A fluffy oat muffin that's full of cinnamon flavor. When you hear snickerdoodle you think COOKIE, but this recipe is turning that notion on its ear. The muffin is simple to make. It's tender and moist but has a little bit of chewiness from the oats. Sprinkling cinnamon sugar on top gives it the snickerdoodle feel.

Ingredients For snickerdoodle muffins

  • 1 1/2 c
    self-rising flour
  • 1 c
    oats
  • 1/2 c
    sugar
  • 1
    egg
  • 4 Tbsp
    butter
  • 1 tsp
    vanilla
  • 1 c
    milk
  • CINNAMON SUGAR
  • 1/3 c
    sugar
  • 1 tsp
    cinnamon

How To Make snickerdoodle muffins

  • Dry ingredients in a bowl.

    Mix all dry ingredients together, flour, oats, and 1/2 cup of sugar.
  • Wet ingredients in a bowl.

    Mix together egg, butter, vanilla, and milk.
  • Wet and dry ingredients combined.

    Add wet mixture to dry mixture; mix until everything is mixed well.
  • Batter poured into muffin tins.

    Fill muffin cups 2/3 of the way full. Bake at 400 for 12-14 minutes.
  • Sugar and cinnamon combined in a bowl.

    While baking, mix the topping together 1/3 cup of sugar and 1 teaspoon of cinnamon.
  • Brushing butter onto the baked muffin.

    Once muffins are out, put the topping on muffins. If you prefer a lot of topping brush a little melted butter on top of the muffin to get more of the topping to stick.
  • Sprinkling muffin with cinnamon sugar.
