    16 oz. package frozen okra ,cut up
  • 8 oz
    fresh mushrooms ,sliced
  • 1
    14 oz.can diced tomatoes with juice
  • 1
    6 oz. can tomato paste
  • 1 tsp
    file powder
  • 2
    bay leaves
  • 1 tsp
    salt
  • 1 tsp
    ground blk pepper
  • 2 Tbsp
    vegetable oil
  • 1 Tbsp
    vegetable oil
  • 2 Tbsp
    flour
  • 1 clove
    garlic, minced
  • 1 medium
    onion, finely chopped
  • 1 medium
    bell pepper, finely chopped
  • ·
    cooked rice

How to Make SMOTHERED OKRA OR (okra gumbo )

Step-by-Step

  1. heat 1 t. oil in a large skillet over med heat, stir in garlic, bell pepper ,and onion, saute until tender.stir in okra, mushrooms,diced tomatoes with juice,tomato paste, file,salt & pepper and bay leaf. cook ,stirring occasionally,for 45 min.
  2. heat 2 T.oil in a med skillet over med. heat ,stirring constantly,add flour, and cook 2 to 5 min. until golden roux has formed.
  3. spoon roux into the okra mixture, and continue to cook, stirring occasionally for 5 to 10 until thickened. serve with rice
