Shrimp Pasta with Mushrooms

I found this recipe a long time ago and have tweaked it to my liking. It is really creamy and delightful and full of great flavor. My whole family loves it and the kids like the tri-color rotini pasta. Enjoy!

Ingredients

  • 1 lb
    rotini pasta
  • 1/4 c
    butter
  • 1 lb
    medium shrimp, peeled and deveined
  • 3 tsp
    old bay seasoning (or any seafood seasoning)
  • 1/3 c
    shrimp stock or water
  • 1/2 c
    chopped green onions (plus a few for garnish)
  • 1 c
    fresh mushrooms thinly sliced
  • 1 pt
    heavy whipping cream
  • 1 Tbsp
    garlic, chopped
  • 1/3 c
    grated parmesean
  • ·
    salt and pepper to taste

How to Make Shrimp Pasta with Mushrooms

Step-by-Step

  1. Cook the pasta according to package directions
  2. Over med-high heat, melt the butter in a large sauce pot. Add the chopped garlic and cook for about 2 min. Add the shrimp and 3 tsp of seasoning. Stir and cook the shrimp for about 2 minutes more.
  3. Stir in the stock, or water and cook for about 7 minutes.
  4. Add the green onions, mushrooms, grated Parmesan, whipping cream and salt and pepper, stir. Cover and cook on med heat for 6-8 minutes.
  5. Add the pasta to the shrimp and reduce heat to low. Cook for 3 minutes more. Sauce will thicken as it stands. Serve
