This was my mom's favorite recipe in the 1970's. Refreshing on hot summer days.

  • 1 - 3 oz box
    orange jello
  • 1/2 tsp
  • 1 c
    boiling water
  • 8 oz
    crushed pineapple in juice
  • 1 c
    grated carrots, coarsely chopped

How to Make Shirley's Sunshine Salad


  1. Dissolve orange gelatin and salt in boiling water. Remove from heat. Pour into mixing bowl. Add pineapple, juice, and carrots to gelatin mixture.
  2. Pour into mold or serving cups. Chill until set.
