Yet another SPAM recipe!!! This is my twist on a Caprese Salad...of course I love my sammies, so here it is! If SPAM is not your cup of tea, substitute it with deli ham slices, salami, pancetta, proscuitto or your choice of meat. Enjoy! Cooking with Passion, sw :)

Ingredients

  • 1 can(s)
    spam, sliced (8 slices)
  • 4-6 oz
    mozzarella cheese, fresh & sliced
  • 2 oz
    baby spinach leaves
  • 2-3 large
    eggs
  • 2 oz
    heavy cream
  • 1 tsp
    italian seasoning
  • 2 Tbsp
    basil, fresh & chopped
  • 2 Tbsp
    tomato paste
  • 1/2 c
    olive oil mayo
  • 1 tsp
    crushed red pepper
  • ·
    kosher salt to taste
  • 3 Tbsp
    butter, unsalted
  • 8 slice
    italian bread (bread of choice)

How to Make SPAMPRESE SAMMICH

Step-by-Step

  1. add 1 tablespoon of butter to a large heated skillet and fry spam slices. flip once and allow cheese to melt. NOTE***you can place spam and cheese under broiler a few minutes to melt the cheese***remove and set asisde. in a mixing bowl combine, eggs, cream, italian seasoning, basil, salt and red pepper. whisk until thoroughly. add remining butter to skillet. add egg mixture flipping once to make the omelet. divide into 4 equal parts. in a small mixing bowl combime tomato paste and mayo
  2. toast bread (optional) build your sammich: spread tomato mayo on bread. add spinach leaves, spam & cheese, omelet and top with bread. ENJOY!
