I got this recipe from my mother, who got it from her neighbor, Rita, who just passed away this year. She was a wonderful cook and a cherished extension of my family.

Ingredients

  • 1 lb
    sweet italian sausage (casings removed)
  • 1 Tbsp
    olive oil
  • 1 c
    onion, diced
  • 1 clove
    garlic, minced
  • 1 tsp
    basil, crumbled
  • 2
    carrots, sliced
  • 1 can(s)
    diced tomatoes
  • 2 can(s)
    beef broth
  • 1 1/2 c
    water
  • 2 small
    zucchini, cut into small pieces
  • 2 c
    cabbage, finely shredded
  • 1 tsp
    salt
  • 1/4 tsp
    pepper
  • 1 can(s)
    red kidney beans

How to Make Sausage Soup

Step-by-Step

  1. Cook the sausage, onion, garlic, carrots, and basil in the olive oil in a stock pot.
  2. Add the rest of the ingredients, except for the red kidney beans.
  3. Cook until the zucchini is tender.
  4. Add the red kidney beans, and simmer for 10 minutes.
