satay (peanut dipping sauce)

The first time I tried this, I didn't know what satay was. When I tasted it, I knew immediately it was a peanut dipping sauce. I like to grill or broil chicken tenders and use this for dipping. It is great. I usually serve a ranch dressing alongside to have a variety of dips for the chicken.

This satay tastes like it came straight from a Thai restaurant. The peanut sauce is fresh and flavorful. Nutty and tangy, there's a small kick of spice from the red pepper flakes. We felt it had the right amount of spice, but adjust the seasoning to suit your needs. Great served with grilled chicken skewers, sliced beef, veggies, or spring rolls for dipping. If you want a thinner sauce, use 1/4 cup of water and mix.

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon dark sesame oil
  • 2/3 cup small-diced red onion
  • 1 1/2 teaspoons minced garlic
  • 1 1/2 teaspoons minced fresh ginger
  • 1/4 teaspoon crushed red pepper flakes
  • 2 tablespoons red wine vinegar or balsamic vinegar
  • 1/4 cup light brown sugar, packed
  • 2 tablespoons soy sauce
  • 1/2 cup creamy peanut butter
  • 1/4 cup ketchup
  • 2 tablespoons dry sherry (optional)
  • 1 1/2 teaspoons fresh lime juice

How To Make satay (peanut dipping sauce)

  • Cook the olive oil, sesame oil, red onion, garlic, ginger, and red pepper flakes in a small heavy pot.
    Step 1
    Cook the olive oil, sesame oil, red onion, garlic, ginger, and red pepper flakes in a small heavy pot on medium heat until the onion is transparent, maybe 10 - 15 minutes.
  • Whisk in the vinegar, sugar, soy sauce, peanut butter, ketchup, sherry, and lime juice.
    Step 2
    Whisk in the vinegar, sugar, soy sauce, peanut butter, ketchup, sherry, and lime juice while cooking for a minute more. Cool.
  • Dipping chicken skewers into Satay (Peanut Dipping Sauce).
    Step 3
    Serve with cooked skewered chicken or meat of your choice.
