Parmesan Nut Muffins

These muffins are so yummy with chowders and chili and they are so easy to make.

  • 3 c
    biscuit baking mix
  • 1/4 c
    grated parmesan cheese
  • 1 Tbsp
    grated parmesan cheese
  • 3/4 tsp
    dried parsley flakes
  • 1/2 tsp
    italian seasoning
  • 2
  • 1 c
  • 2 Tbsp
    butter, melted and divided
  • 2 Tbsp
    chopped nuts of your choice

How to Make Parmesan Nut Muffins


  1. In a large bowl, combine the biscuit baking mix, 1/4 cup of parmesan cheese, parsley and italian seasoning. In a small bowl whisk the eggs, milk and 1 tablespoon butter. Stir the wet ingredients into the dry ingredients just until moistened.
  2. Fill a paper lined or greased muffin cup pan 3/4 full. Pour remaining butter over the tops and sprinkle each top with the chopped nuts and the remaining parmesan cheese.
  3. Bake at 350° for 15 to 17 minutes or until a toothpick comes out clean. Cool 5 minutes before removing from pan. Serve warm.
  4. Note: These also freeze well.
