As a diabetic, I try to recreate favorite foods so that I can eat them. This is a recipe we got years ago from a friend; it's so easy and moist. Plus, it doesn't heat the whole house. Now I can have banana loaf all year round.

What a wonderful cooking method to make banana bread. The flavor of this banana loaf is very mild, but quite tasty with a dense and springy texture. We used a metal pan and put it right in the Crock Pot.

Ingredients

  • 3 medium ripe bananas
  • 1/4 cup butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup Splenda
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda

How To Make banana loaf in a crock pot

  • Step 1
    Slightly mash the bananas with a fork. Combine mashed bananas and all ingredients in an electric mixing bowl. Beat 2 minutes or until well mixed.
  • Step 2
    Pour into a well-greased 2 lb coffee can or a steel bowl that fits your Cock Pot.
  • Step 3
    Place the can or bowl in the slow cooker. Cover the can or bowl with 6 layers of paper towels between the cooker lid and bread.
  • Step 4
    Cover the cooker. Bake on high 2 - 2 1/2 hours, or until a toothpick inserted in the center comes out clean.
  • Step 5
    Cool for 15 minutes before removing the can or bowl from the slow cooker.
