I wanted soup one night and this was what I had on hand. Even my super picky husband loved this (and he'll only eat regular chicken soup). Hope you enjoy!

Ingredients For chicken sausage and bean soup

4 cchicken stock
-
1 lbhot chicken sausage (casing removed)

1 cantomatoes, canned italian-style and diced
-
1 cangreat northern beans(drained and rinsed)

1 cangarbanzo beans (drained and rinsed)

1 pkgfrozen spinach (10 oz.)

2 Tbspolive oil
-
salt and pepper (to taste)

parmasean cheese (optional)
How To Make chicken sausage and bean soup

1In a large sauce pot heat olive oil.

2Add sausage, crumble and cook until no longer pink, drain, put back in pot.

3In the same pot, add chicken stock and tomatoes.

4Bring to a boil, then simmer, covered, for 10 minutes.

5Drain spinach and squeeze out excess water.

6Add beans and spinach, cover and simmer an additional 15 minutes.

7Salt and pepper to taste.

8Garnish with parmasean cheese (if desired).
