This is the cornbread recipe my ex-husband and MIL use to make the cornbread for cornbread dressing.

Ingredients

  • 1 1/2 c
    cornmeal
  • 3/4 c
    flour
  • 2 tsp
    baking powder
  • 1/8 tsp
    baking soda
  • 1 tsp
    salt
  • 1
    egg, slightly beaten
  • 3 Tbsp
    bacon grease + enough to grease the iron skillet
  • 1/2 + c
    buttermilk

How to Make Southern Cornbread MMB

Step-by-Step

  1. Mix the dry ingredients together.
  2. Add egg, bacon drippings. Slowly ad buttermilk until the mixture is soupy (sort of like cake batter, maybe a little thinner.)
  3. Grease iron skillet with bacon drippings, enough to give it a nice even coat. Put the greased iron skillet in the oven until it is really hot - a few minutes, before pouring in the batter. Bake at 400 for 30-40 minutes.
  4. I suppose you could make this in another oven safe dish, but I'm not sure how long you would cook it.
