My grandmother used to fix corn pudding on holidays. I had not had any for 20 years, did not have a recipe, so just put together ingredients that I thought would work. Mine turned out better and richer. Took some to church supper once and was requested by my pastor ever year, for the next 20 yrs,to make for Christmas banquet that community officials and professionals attended. I was requested to make it many times throughout the year also. The largest banquet seated 650 people.

Beat eggs until foamy. Add dry ingredients one at a time and mix well. Add whipping cream and butter and mix. Stir in corn and mix. Preheat oven to 350 degrees. Pour mixture into casserole dish and cover with foil. This dish cooks better if it can sit in a larger pan filled with hot water. Cook for 15 min, then cut heat back to 300 degrees and continue to cook until knife inserted in center comes out clean. Remove the foil and allow to brown on top for about 15 min. Remove from oven and allow to cool completely before covering to prevent condensation of steam. This dish is better served on the same day. The cooking time will vary with different ovens.
