  • 1 lb
    lean ground beef or turkey
  • 1 can(s)
    16oz fat free refried beans
  • 2 tsp
    dried oregano
  • 1 tsp
    ground cumin
  • 2 c
  • 2 c
    reduced fat sour cream
  • 1 can(s)
    2 1/4 sliced olives - drained
  • 1 c
    shredded reduce fat cheese
  • 1/4 c
    thinly sliced green onions
  • 16 oz
    jar of salsa
  • 3/4 tsp
    garlic powder
  • 9
    uncooked lasagne noodles

How to Make Mexican Lasagna


  1. In a non-stick skillet, cook beef and drain. Add spices and beans. Heat through completely. Coat a baking dish with cooking spray ( 9x13 ) Place 3 noodles in dish and cover with 1/2 the meat and bean mixture. Repeat layers. Top with noodles.
  2. Combine salsa and water mix together. Pour this mixture over the noodles. Cover and Bake 350 degrees for 60 - 70 minutes or until noodles are tender. Spread with sour cream. Sprinkle with olives, cheese and green onions. Cool slighly before serving.
  3. 341 cal. 13 grams of fat and 4 fiber. 7 points per serving. Enjoy
