meatloaf "pie" with mozzarella filling

This is my adaption of a recipe that I received through an email newsletter from Thrifty Fun Recipes. We had it for dinner tonight and I should have taken a picture of it but we were both hungry and anxious to sit down. Needless to say, we ate much more then we should have because it was such a tummy warmer. I hope you try it and let me know what you think.

Ingredients For meatloaf "pie" with mozzarella filling

  • 1 1/2 lb
    lean ground beef
  • 3/4 c
    old fashioned oats
  • 1
    egg
  • 2 Tbsp
    grated romano cheese
  • 1 1/2 tsp
    italian seasoning (see note below)
  • 1/2 lb
    sliced mozzarella cheese

How To Make meatloaf "pie" with mozzarella filling

    Mix the ground meat, oats, 1 egg, cheese, 1 tsp. of the Italian seasoning, and pepper to taste. Pat half the mixture into a 10 inch glass pie plate. Add sliced mozzarella cheese over the bottom layer of meat. On waxed paper, pat the remaining meat into a round layer about the same size as the pan by using wax paper below and over the meat. Use the waxed paper to flip the meat layer on top of the mozzarella. I used my rolling pin to roll out the second layer of meat. Bake in a 350 degree F oven for 40 minutes, or until cooked through and the mozzarella layer is melted. Cut into wedges to serve.

    Note: Use 1 tsp. oregano, 1/2 tsp. thyme, 1/2 tsp. rosemary instead of the Italian seasoning to save cost of an additional seasoning.
