I just love Asian cuisine, and especially lo mein. This is such a delicious and easy recipe and it's something different to have at those family bbq's.

Ingredients

  • 1 pkg
    lo mein noodles ( 8 oz. )
  • 1/3 c
    peanut butter
  • 1/4 c
    soy sauce
  • 1/4 c
    orange juice, fresh
  • 1/4 tsp
    ground red pepper (cayenne)
  • 3 medium
    carrots, shredded ( 2 cups )
  • 1 large
    red bell pepper, cut into 1/4 inch strips
  • 6 medium
    green onions, sliced ( 6 tbsp.)
  • 1/2 c
    dry roasted peanuts

How to Make Peanut Noodle Salad

Step-by-Step

  1. Break noodles into thirds. Cook and drain as directed on package. Rinse with cold water; drain
  2. Mix peanut butter, soy sauce, orange juice, and red pepper until smooth.
  3. Toss noodles, peanut butter mixture and remaining ingredients until well incorporated. Refrigerate until served.
