If any of you have had a Potbelly cookie, you know why I am trying to recreate this recipe. They are delicious! This recipe is close and very, very good.

Wow, these are delicious oatmeal cookies. A cross between an oatmeal cookie and a chocolate chip cookie, you get the best of both worlds in every bite. They're a copycat found at Potbelly sandwich shops (hence, the almost Potbelly name). Chewy and tender, have a cold glass of milk handy for dipping.

  • 1 c
  • 1 c
    brown sugar
  • 1 c
    white sugar
  • 2 lg
  • 2 tsp
  • 2 c
    all-purpose flour
  • 2 1/2 c
  • 1 1/2 tsp
    baking soda
  • 1 tsp
  • 2 c
    chocolate chips

How To Make almost potbelly oatmeal chocolate chip cookies

Test Kitchen Tips
Each oven is different. We did have to bake ours a few minutes longer.
  • Oven set to preheat.
    Preheat oven to 350 degrees.
  • Creaming sugars and margarine.
    In a large mixing bowl, cream margarine and sugars.
  • Slowly adding eggs.
    Add in egg, one at a time, beating after every addition.
  • Mixing in vanilla extract.
    Mix in vanilla.
  • Dry ingredients combined in a bowl.
    In a separate bowl, combine oats, flour, baking soda, and salt. Mix together.
  • Folding chocolate chips into batter.
    Then slowly add into the margarine mixture. Add about a cup at a time, mix, then add another cup. Do this until it is all blended together. Mix in chocolate chips.
  • Dough formed into balls and placed on baking sheet.
    Form dough into medium size balls. Place on cookie sheet covered with a Silpat or parchment paper.
  • Cookies baking in the oven.
    Bake for about 10 minutes.
