Another good southern recipe. This is delicious anytime but especially good on New Years day, as it is suppose to bring you good luck. What the heck...It's worth a try and so delicious. This recipe is also a main dish with the sausage added. Hope this will bring you all the good luck you can handle

Ingredients

  • 1 lb
    jimmy dean hot sausage
  • 1 small
    bag of dried black eyed peas
  • 1 lb
    ham hocks
  • 1 medium
    onion, chopped
  • 1/2 tsp
    red pepper
  • 4 c
    water
  • 1 1/2 c
    long grain white rice, not cooked
  • 1 tsp
    salt and pepper

How to Make Hoppin John

Step-by-Step

  1. In a large pan brown the sausage until no pink is showing. add the peas, ham hock, onion, red pepper, salt and pepper. Cover with water and bring to a boil. Reduce heat to medium-low and cook for 1 1/2 hours.
    Remove ham hock and cut meat into pieces. Return meat to pot. Stir in the rice, cover and cook until rice is tender, about 20 to 25 minutes. Season to taste with salt and pepper.
