Delicious way to use leftover mashed potatoes. My family goes for these in a big way . I have lightened the recipe at times by using bacon bits, egg beaters, 2% cheese and frying in a nonstick pan with a little light olive oil. Healthier and still good but of course we prefer the original way! lol

Ingredients For potato cakes

leftover mashed potaoes

3slices bacon fried crisp
-
1small onion finely diced
-
1/2 cshredded cheese, optional

bacon grease
-
1egg
-
1/2 cflour
How To Make potato cakes

1Fry bacon. When nearly crisp add onion and saute along side bacon. Drain bacon slices on paper towel. Scoop onions out of skillet leaving bacon grease in skillet.

2Place leftover mashed potatoes in a bowl then add egg,crumbled bacon,onions and mix together.

3Add enough flour to make mixture stiff enough to hold patty shape.

4Heat bacon grease in skillet and place patties or drop by 1/2 cup into skillet making sure to somewhat flatten potatoes if using 1/2 cup.

5Fry until crisp then flip and fry on other side. Very good, very crispy, very easy.
