Delicious way to use leftover mashed potatoes. My family goes for these in a big way . I have lightened the recipe at times by using bacon bits, egg beaters, 2% cheese and frying in a nonstick pan with a little light olive oil. Healthier and still good but of course we prefer the original way! lol

Ingredients For potato cakes

  • leftover mashed potaoes
  • 3
    slices bacon fried crisp
  • 1
    small onion finely diced
  • 1/2 c
    shredded cheese, optional
  • bacon grease
  • 1
    egg
  • 1/2 c
    flour

How To Make potato cakes

  • 1
    Fry bacon. When nearly crisp add onion and saute along side bacon. Drain bacon slices on paper towel. Scoop onions out of skillet leaving bacon grease in skillet.

    Place leftover mashed potatoes in a bowl then add egg,crumbled bacon,onions and mix together.

    Add enough flour to make mixture stiff enough to hold patty shape.

    Heat bacon grease in skillet and place patties or drop by 1/2 cup into skillet making sure to somewhat flatten potatoes if using 1/2 cup.

    Fry until crisp then flip and fry on other side. Very good, very crispy, very easy.
