I made this cake a few times for family gatherings, and for my husband. Everyone thoroughly enjoyed this cake and wanted more. This cake is soooo good because it is made from fresh key limes and from scratch.

Ingredients

  • CAKE:

  • 3 oz
    package lime flavored gelatin
  • 1 1/2 c
    granulated sugar
  • 2 c
    sifted all-purpose flour
  • 1/2 tsp
    salt
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 5 large
    eggs, slightly beaten
  • 1 1/2 c
    vegetable oil
  • 3/4 c
    orange juice, fresh
  • 1 Tbsp
    lemon juice
  • 1/2 tsp
    vanilla extract
  • 1/4 c
    key lime juice
  • 1/2 c
    confectioners' sugar
  • CREAM CHEESE ICING:

  • 1/2 c
    butter, room temperature
  • 1 - 8 oz
    package cream cheese, room temperature
  • 16 oz
    box confectioners' sugar

How to Make Key Lime Cake

Step-by-Step

  1. Preheat oven to 350 degree and flour 3 9-inch-round cake pans.
    In a large bowl, mix gelatin, sugar, flour, salt, baking powder, and baking soda. Add the eggs, oil, orange juice, lemon juice, and vanilla. Divide batter evenly among the 3 pans and bake for 35 to 40 mins.Test for doneness,cool layers in pan for 5 mins., then turn onto racks.
    While layers are still hot, mix the lime juice and confctioners' sugar and pour over the layers on the racks,. You can pierce the layers with a fork and allow the glaze to soak in better. Let layers cool completely before icing.
  2. Cream butter and cream cheese, beat in confectioners' sugar until mixture is smooth and easy to spread. Spread icing between layers and on top and sides of cake.
    Cream cheese icing is optional. Cake is beautiful and taste great with just the glaze. I prefer icing the cake.
