How to Make Taco Salad

  1. Brown ground chuck in large skillet. Make sure that it is cooked throughly. Drain ground beef and transfer cooked ground beef to a colander and rinse with warm water. This removes the most of the fat so the salad will not be greasy. Return Ground beef to skillet.
  2. Drain both cans of black beans and rinse well. Add these to the ground beef and add both packages of taco seasoning. Mix well. Transfer to a large bowl, cover and refrigerate overnight.
  3. When ready to serve, mix in the lettuce, tomatoes, most of the cheese (reserve some for garnish), the Catalina dressing, most of the corn chips (reserve some for garnish) with the meat mixture. Top with sour cream, sliced black olives, reserved cheese and corn chips.
