hoosier fried bluegill

Simple is usually best with freshly caught fish. Here is how my Dad liked his bluegill prepared.
Ingredients For hoosier fried bluegill
2 lbfresh caught, cleaned bluegill
1 1/2 tspsalt
1 tspfreshly ground black pepper
1/2 tspgarlic salt
1 cyellow cornmeal
vegetable oil for frying
How To Make hoosier fried bluegill
1Clean fish and pat dry with paper towels. Mix dry ingredients in a plastic bag. Place fish in bag one piece at a time and shake. Fry in a small amount of hot oil until outside is crispy and fish flakes easily with a fork. Drain on paper towels and serve hot with lemon wedges and tartar sauce.
